Slow-cooker Salsa Chicken | Greenville, NC Photographer

As many of you know, in addition to running this photography business, I have a full-time office job.  I work the typical 8-5, and I really enjoy cooking.  Problem is, it’s difficult to find the time sometimes!  By the time I get home from work, I’m exhausted and want a quick dinner, do some editing work, and go to bed.

This is why I LOVE my slow cooker!!

It’s so easy to make dinner using my Crock Pot because I can come home for lunch, throw my ingredients in, and dinner is ready by the time my husband and I get home from work.  Amazing!  And you know the best part of it?  The house smells amazing and delicious when you walk in the door at the end of a long workday.  Win-Win!

 

So anyways, I wanted to share this recipe with you that I found on Pinterest (of course!) of the best, most delicious chicken I’ve ever made.  It’s also the easiest chicken I’ve ever made.  Behold, Salsa Chicken!  (I dare you not to try eating it like candy!)

 

Slow-Cooker Salsa Chicken Tacos

Ingredients:

6 Boneless, Skinless Chicken Breasts
1 jar of Salsa (16 oz.)
1 packet of Taco Seasoning
Lay the chicken breasts in the bottom of the slow cooker.  They may be thawed or frozen.. it works either way!  Mix salsa and taco seasoning together, and pour over chicken.  Close lid, and let cook.  4-6 hours on high, 6-8 hours on low.

Chicken should shred easily with a fork when done.. in my first experience, the chicken was so fall-apart tender, it was difficult to get it out of the cooker to shred apart.. it kept breaking apart!

Once you’ve shredded the chicken, eaten a few morsels, and sufficiently gotten really super hungry because of how good this smells/looks as it’s falling apart, put the chicken back into the crock pot! This is the key I’ve found to making the chicken EXTRA moist, delicious, and full of flavor.

You can serve it up at this point or let it cook for a little longer, depending on your estimated serving time.  This is a good time to get all your plates and fixin’s out.  I made tacos with this chicken the first night, and used the leftovers for Chicken Enchilada Casserole.  It will also make delicious Tortilla Soup, Quesadillas, Chimichangas, Burritos, and basically anything else you can think of.  I used some of the leftovers to make some nachos for lunch!

Also, please pardon the pictures.. It was already dark outside when I got around to taking these, and I didn’t have a lot of time to play around with set ups.. I know I also didn’t get a picture of the ingredients going into the Crock Pot, but you can use your imagination!  I used Old El Paso brand Salsa and Taco Seasoning.
